Mince Pies (ve, gf, refined-sugar free)

Deliciously festive mince pies, with the Mana Living twist.
These wheat and gluten-free, refined sugar-free, vegan mince pies are the perfect addition to any Christmas table, whether you’re a health-conscious vegan or not.

They also make great edible gifts. I wholeheartedly believe that, if we care for our loved ones, we should give them the gift of wellness (in the form of healthy food, activities etc.) instead of more traditional gifts such as alcohol and processed treats.

    • 2 red apples

    • 2 oranges

    • 1tsp vanilla extract

    • 200g raisins

    • 100g cranberries

    • 4 + 1/2 tbsp coconut oil

    • 1tsp cinnamon

    • 1tsp mixed spice

    • 200g ground almonds

    • 200g dates, chopped

    1. Slice open and core the apples. Then chop into small pieces. Juice the oranges.

    2. To a medium pan add the apples, orange juice, vanilla extract, raisins, cranberries, 1tbsp coconut oil, the cinnamon and mixed spice. Bring to a boil and them simmer for 20 minutes, stirring every now and then. Add a splash of water if it starts sticking to the pan.

    3. Melt the remaining coconut and use 1/2 tbsp to grease 2 mini-muffin tins. This recipe makes 24 mini-mince pies.

    4. Place the dates in a food processor and blitz until a paste has formed. Then, add the ground almonds and 3tbsp of melted coconut oil. Blend until everything is well combined.

    5. Pre-heat the oven to 180ºC.

    6. Place this mixture in between 2 sheets of greaseproof paper and roll with a rolling pin to a 5mm thickness. Using a round cutter (I used a scone cutter), cut out rounds of almond dough and press them into the tins. Keep rolling and cutting the dough using any scraps to cut out stars or any other festive shapes.

    7. Bake the pie cases (you don’t need pie crust weights) for 6 to 8 minutes, covered with kitchen foil.

    8. Remove from the oven and spoon the mince pie filling into each case. Top with the star and bae for another 8 minutes.

    9. Let is cool in the tray before serving.
